To Make Elder Wine
Take a quantity of Elder berrys full ripe & squse them with your hand & strain out the Juice through a corce cloth w th your hand but not to hard & put e mashed berries into a clean Tub then mesure out your Juice & so many pints of iuice as you have but so many Gallons of water wel boyled boyling hot upon the mashed berriws & stor them very wel & let them stand all night to draw of e strenth of e berries then strain it through a hare seive & to every Gallon of water put a pint of Juice & two pound of sugar & let it boyl an Hour then take it of & when it tis cole work it w th East as you do Ale & before e head falls Tun it up but not your vessel be a bove three quarters ful & at two months end if it be fine bottle it
