Quinces white

Take such Quinces as are not of your
greatest sort but of an reasonable bignes
& before you ether pare or core them
take there full weight in duble refined
sugar then with a smal knife core them cleane
& make a prity big hole through them then put
them into a skilet of water & parboyle
them & a littel in the mean time make your
syrupe thus

To one pound of sugar put a quarter
of a wine pinte of water
You must not peserve above 4 pound of
Quinces at a time you are to make your
in a deape silver dish Bason & when
hath boyled & cleane scumed pare your
Quinces as fast as you can & put them
into & put them into it thay must stand
