Another way to Preserve
Quinces white
Take such Quinces as are not of your
greatest sort but of an reasonable bignes
& before you ether pare or core them
take there full weight in duble refined
sugar then w th a smal knife core m cleane
& make a prity big hole through m then put
them into a skilet of water & parboyle
m & a littel in e mean time make yo
syrupe thus
To one pound of sugar put a quarter
of a wine pinte of water
You must not peserve above 4 pound of
Quinces at a time you are to make yo
in a deape silver dish Bason & when
hath boyled & cleane scumed pare yo
Quinces as fast as you can & put them
into & put m into it thay must stand
