To Pr serue Barberryes.
Take yo
pull of the blacke tipp at the end, then take
to a pound and a halfe of Barberryeb, a
pound and a halfe of double refined Sugar
then take noe more water to make yo
Sirrop then will wet yo Sugar, then set
on the fire till it boile, then take it off and let
it boile put in yo Barberryes and set it on a
quicke fire let it boile vp and take some of
the Sirrop in a Spoone and poure it on
againe, this doe two or three times, and they
will be enough, take them from the fire
and let them stand a Little, strowing
a little Sugar vpon them then set them
on the fire and let them haue two boileings
vp, then Lay them bunch by bunch, one by
another in yo Glasse, then put halfe the
Sirrop to them while they are warme, &
reserue the other halfe to Capp them w th
then [couer] them w th paper close to the
Sirrop.
