Orange Pudding
Pare one & the Juice of 2 Oranges very thin beat y:m[them] in a morter very fine
a 1/4 lb Loaf Sugar & 1/4 lb of Butter the Yolks of Six Eggs & little Rose water
put it in puff paste and bake it.

APPLE PUDDING
Six apples, 6 oz Butter, 6 oz Sugar y:e[the] peal of one Lemon grated
Six Spoonsfull Rose Water baked in crust, 6 eggs.

CUSTARD PUDDING
One quart of milk, twelve Eggs, 6 Spoonsfull of Flour beat well togather
Butter your Bagg very well, let it boil one Hour, Melt Butter, Sugar
rose water Sauce.

To make Mince Pyes
One pound of Tongue or Mutton, 2 lb of new Beef Suet or marrow, 1 lb
Sugar, 1/2 lb Currants, 1/2 lb of Raisons, 1/2 oz spice viz: Cinnamon, Cloves,
mace, nutmeggs, about 6 peppers, a little ginger, & a little orange or Lemon peal
better y:n[then] two Jills of rose-water & some citron.

To Alamode a Tongue
Take a Tongue & Parboil it & Skin it, stuff it w:th[with] a rich Stuffing put it in
some gravy, put a little more ketchup in the Gravy & put some [balls?]
round it & Stick the tongue thick with Cloves.
