Mince Pies Mrs, Keen's receipt
[in pencil] right

Take 1 lb suet chopped very fine, 1 lb raisins
stoned and chopped, 2 lb currants well wash=
=ed, picked, and rubbed, 1 lb sugar, 6 apples
chopped fine, the juice of 3 lemons and the
rind boiled and chopped fine, a little mace,
nutmeg, and salt, 1/2 pint of Sherry and 1/2 pint
of brandy, and a little candied peel, mix all
well together.

To make [??iggs]

Take two quarts of fine flour 1/2 lb of butter
and a little ginger, rub the butter well into
the flour then take 4 eggs well beaten and
as much thick balm as eggs, beat them
well together, put almost a pint of milk
to the balm and eggs - then strain it
