Potato Soup

2 long strips bacon
2 cs potatoes
2 medium onions, cut very fine
1/2 c celery, cut very fine
1 1/2 t salt
1/4 t pepper
2 cs milk
2 cs water
Bacon and celery may be omitted.
Cut bacon into 1/2 inch pieces
and brown in soup kettle.
Add potatoes, onions, celery, salt,
pepper and water. Cook slowly
over flame until potatoes
are tender. Mash without
draining. Add milk; return
to the fine and bring to the
boiling point.
Carrots and butter may be added.

Russian Dressing

1/2 mayonnaise
1/2 evaporated milk
Chili sauce about the same
quantity. Mix. May be poured
over lettuce hearts or oranges.

Cabbage and Carrots Salad

Shred or grate cabbage and
shred or grate carrots and put
on top of cabbage. For a garnish
mayonnaise may be put on top.
