Peach upside down-cake Mrs. [Angerino?]
served with whipped cream

1/4 lb butter
1 c brown sugar
1 can peaches
Melt butter slightly in a heavy
frying pan. Spread evenly over
the brown sugar. then the peaches
with the hollow side up.

Batter

3 eggs
1 c sugar, brown
5 tb peach juice
1 c flour
1 t baking powder
Beat the eggs, add sugar,
peach juice and flour sifted
with baking powder. Pour over
the mixture and bake in a
moderate hot oven 375°. When done
place cake plate on top of
pan, and turn over on plate.
