Carrot Cake

1/2 c boiled carrots, run thru sieve
and blend with
1 c sugar
1/3 c shortening
1 scant cup of milk
Alternate with 2 c flour,
sifted with 1 t each of cream
of tartar and corn starch
and 1/2 t each of salt and
soda
1 t lemon extract

Watch the cake when baking
as itburns easily.

Cup Cakes, Delicious Geraldine
1/3 c butter
1 c sugar, scant
1 t vanilla or nutmeg
2 eggs, beaten
1/2 c milk
2 1/2 t baking powder
1/4 t salt
1 3/4 cs flour
Cream butter, & sugar; add eggs, baking
powder and flour and salt, which
have been sifted; add milk and
flavoring. Bake in an oven about
375 degrees -- 15 min. Beat for 3 min.
Start oven at 350 degrees and raise to
375 degrees to brown.
