Corn Spoon Bread

Put 1 T. butter, 1 1/2 t. salt,
1 c. yellow cornmeal into
2 c. boiling water in top
of double boiler. Stir
until thick. Place in bowl
and allow to cool.

Beat 4 egg yolks into 1 c.
milk and beat into
corn mix. Mix thoroughly
1/2 c. flour, 2 T. sugar
2 T. B. P. and add to
first mixture. Beat
4 egg whites very stiff
and fold in. Fill
buttered baking dish
half full.

Very hot oven - 1/2 hour
Serve hot.
