Angel Food Cake

1 c. egg whites (8-10 eggs)
3/4 t. cream of tartar
1 1/4 c. sugar (sifted)
1/4 t. almond extract
1 c. flour
1/4 t. salt
3/4 t. vanilla

Beat whites until foamy - add salt. Add cream of tartar, beat until stiff enough to stand in peaks. Fold in sugar, a tablespoon at a time. Add flavoring. Fold in flour. Pour into ungreased pan - 275° - 50-60 min - increase heat slightly when cake is almost done. Invert cake 1 hr, or until cold.
