Take 1 1/4# of flour 1# of
butter well washed, and
divide it into 4 parts
1 quarter cut up fine in
3 quarters of your flour
and wet it with 1 tumbler
of water divide the remaining
1/2 # of flour in 2 parts, roll
out your past and put
the butter in 3 different times
sprinkling it every time with
the half of your flour that
was divided, roll it out
well, cut of the edges, lay them
in the middle and fold it
up and put in a cold place
