Calves Head Turtled
Put the head into a pot and let
it boil untill you can separate the Jowl
from the head. cut the remainder
up and make a gravy of it with
pepper mace and cloves then rub
the Jowl with an egg and fine
crumbs of bread thick over it then
lay small slices of butter. put it
into a Stew pan in an oven throw
the gravy round it with force
meat balls to brown put coals
on the lid of the oven.
