21[st] July Cherry Bounce 19[th] august

Put 30 lb morello cherries & fourth
proof Brandy into a [demigon] & let it
stand 3 or 4 weeks then pour off
the Brandy and put 7 quarts of
water to the cherries and let it stand
two weeks longer clarify 6 or 8 pound of
sugar with one quart of water mix
it with the brandy while warm

Preserved Cherries

Get cherries fully ripe stem them
and prick them with a pin To
two pound of cherries put 1 1/2 lb of
loaf sugar beat part of your
sugar and strew it ofer them
let them stand all night dissolve
the rest of the sugar in 1/2 lb of curran[t?]
Let them over a slow fire and put
the cherries with the sugar give them
a gentle scald let them stand [over?]
night & scald them again
& boil the syrup
