17. Veal Cutlet.

Use a half-inch slice
of veal from the leg. Cut in
pieces for serving, season
with salt and pepper, roll
in flour, dip in beaten egg,
roll in crumbs.
Brown slowly on both
sides in a little fat in
a skillet. Cover, and cook
slowly for 30 to 45
minutes, or until the
meat is tender.
