Ham Loaf
2 cups ground cooked ham
2 tbsp. butter
2 eggs, well beaten
1 small onion, chopped
½ cup bread crumbs
2 tbsp. tomato ketchup
2 tsp. Worcestershire Sauce
¼ tsp. prepared mustard
salt and pepper to taste

Melt butter in frying pan. When hot, add
chopped onion, fry until not quite brown.
Add to ham which has been minced with
all the remaining ingredients & shape into a
loaf. Place in a well greased baking pan
in a moderate oven 350° for about 40 min. Turn
out on platter, garnish with parsley & serve
with Raisin sauce or serve with prepared
horseradish that has been mixed with whipped
cream. Serves 4.

Raisin Sauce: 1 cup apple cider, 2 tbsp.
flour, 2 tbsp. butter, ¼ cup raisins & pinch salt.
Melt butter in saucepan. Add flour & salt & brown
slightly. Add cider gradually, stirring constantly to
make a smoothpaste. Add raisins & serve hot.
