If you want to put some of the dough in the Refrigerator, mix with the sugar and salt 1/4 tsp soda for every cup of the yeast ferment used. After dough is mixed, put dough to be saved into a bowl, well greased and grease the top of dough. Cover with waxed paper.

Raised Doughnuts

Permit dough to raise, when ready to shape, roll to ½ inch thickness, cut with doughnut cutter and let raise on the board until double in bulk, then fry in deep hot fat or oil 370° F. until a nice even brown. Turn on soft paper and sprinkle with powdered or granulated sugar as you wish.

Note: - When heating fat for deep fat frying, be sure to do it gradually and have a low flame. Watch fat carefully.

Curli - Cues

After dough has risen, roll to ½ inch thickness. Cut in strips, seven inches long. Use wooden meat skewers or use the regular cruller forms. Curl dough around these forms, let raise over hot water to double in bulk. Fry in 370° F. fat until an even brown. Sprinkle with powdered sugar or granulated sugar.
