46 To Stew Eels
Let your Eels be large, Cut them & take W.
Bone out, Cut them in pieces & put them
into a stovepan with Water. Put layers of
small round Onions at Bottom & Top, & a
bunch of sweet herbs ite up in a Bag to
stew with them. When they have stewed a
good while together take W. Eels out ^in a Dish that they
may not be done too much, & stew W. Onions
in W. same liquor till they are quite tender that
a spoon may go through them. Squeeze all W.
goodness out of W. Herbs in W. Bag. Put in your
Eels to be thoroughly hot, Thicken them up
wutg a piece of Butter & Flower breded together
& Serve them up in Soup Dish with Lemmon
& or milk. A little Salt in them
