Maple Mousse with Eggs Heat 1 cup M-syrup & pour while hot over the beaten yolks of 6 eggs, cook mixture over hot water until the custard will coat the spoon. Strain into a dish set in crushed ice & beat until cold. then fold in 1 qt. double cream beaten stiff Pour into molds covered closely with paraffin paper & pack in ice 4 hours

Maple Souffle'
Melt 3 tablepoons butter, add 3 level " of flour & when frothy, also, gradually, 1 cup of thin M. syrup. When mixture boil remove from fire & slowly pour over the well beaten yolks of 4 eggs then fold in the whites beaten stiff & then bake until well puffed up & firm to touch.

Maple & Macaroon Souffle'
Pound 1 & 1/2 cups of macaroons measure after pounding. Add 1 cup scalding cream. when cool stir in 1 cup M. syrup, a few drains salt & yolks of 4 eggs well beaten & mix thoroly. Then fold in stiff whites. Pour into small molds about 3/4 full. Bake in pan of hot water & serve immediately

Maple Cake Filling
Put in sauce pan 1 cup of cream, 1 cup sugar & 1 heaping cup of maple sugar broken in small pieces. heat slowly over fire, until M. sugar is melted then boil steadily until a little dropped in ice water will form a soft ball take at once from fire & lt stand 5 min. & stir slowly until begins to thicken. Spread between layers of cake.

Maple Nougat Boil 2 cups grated M sugar, & a walnut of butter. 1/2 cup cream until thick & waxy when dropped in water. then add 1 cup chopped nuts, walnuts. Pour while hot over portions of cream reading to serve.

Boil 1 1/2 lb. m. sugar 1 cup New Orleans Molasses 1 " water 1 level teaspoon cream of tartar Test by dropping in cold water after 10 seconds roll in ball then press between teeth & if doesn't stick, add 1/2 cup butter, boil 3 min. remove from fire & add 2 teaspoons of bicarbonate of soda dissolved in little water, as soon as begins to foam pour on large platters, well oiled & spread thin Sprinkle with fine chopped nuts when cool break in squares
