Beat the yolks of ten the whites of five eggs, with three quarters of a pound of sugar and four spoonfuls of Brandy, one hour. Melt one pound of Butter before the fire and beat it into a light batter; when the oven is ready, stir the eggs into the butter, then one pound of fine flour dried, one ounce of Carraway seeds, one drachm of cinnamon and the same of mace: put it immediately onto the oven which should be quick , and one hour will bake it.
