Maderia 3.

30 lb Coarce Sugar to ten Gallons Water. Boil Sugar & Water half an hour. Scum it clear. When cold put to every Gallon one quart New Beer out of the Tub. Let it work a day or two, then put it in your cask with one pounf of sugar candy, four pounds of raisins, one pint of brandy, & two ounces isinglass. When it has done working stop it up to stand one year before it is put into bottles.

4. To Stew Pears

Pare & half the Pears & throw them into water to prevent their turning black. To a pint of water 30 grains of cochineal powder's fine, 3 drachms cream of tartar. Let it boil slowly a few minutes sweeten it to your taste, then put in your pears. Have them cover'd with liquor, add a few cloves, stew them 3 or 4 hours. When tender take them out, pour the liquor over them. Add a small piece of allum.
