Aunties' cakes.

Ingredients — 1lb Maizena
2 teaspoons Baking powder
rind of 3 small lemons — ½ lb
sifted sugar — ¾ lb butter —
4 eggs —
Cut lemon peel to shreds & chop fine.
mix the dry ingredients into a
stiff batter with the eggs well
beaten. Put a teaspoonful into
each little patty tin & bake
5 minutes in rather a quick
oven —

Guava Jelly

Take 10 lbs guavas of which the greatest
part must be green, & not one guava over
ripe. Over ripe fruit spoils both flavor &
& consistency of jelly. Cut the guavas
in half & put them into the preserving
with rather over 2 qrts water. Let them
simmer gently over a moderate fire till
the fruit is all quite tender. Strain through
a coarse linen cloth, squeezing till dry. To
each qrt of juice add twice the quantity of
sugar. Scald the pan & replace the sweetened
juice. Stir gently over the fire till sugar is
dissolved. Remove the scum as it forms. In
from 30 to 40 min, the liquid should have
become a dark color. Drop a little of the
jelly into a saucer of cold water. If it
congeals it is ready, if not go on boiling [very]
gently till it does. Strain through a
muslin or flannel — Over —
