Carl Creek recipes —
Tea-cake
Into a quart of flour, 1 teaspoonful
carbonate of soda, 2 teaspoonfuls
cream of Tartar (or 1 of acid) & a
good pinch of salt. 1 tablespoon
of butter (or dripping) & add
enough milk to give it the
consistency of a stiff batter. Drop
pieces into a greased tin, a
short distance apart, & bake
immediately in a quick oven
for 15 minutes — To be eaten
hot or cold.
"Numinum cake"
3 eggs, 1 cup sugar, 1 cup flour
1 third teaspoon Soda 1 teaspoon
cream tartar, lemon peel. Beat
eggs well & stir all together quickly
& bake in a quick oven. The
batter ¾ of an inch thick.
Plain cake
1lb flour, ¼ lb sugar, ¼ lb currants
¼ lb sultanas, a little candied
peel, 1 teaspoon ginger, 1 teaspoon
carbonate soda. Mix well with
a large cupful of butter milk.
Bake about an hour & a half.
Snow eggs
A custard of 4 eggs & cup ½ of milk.
The whites used by beating to thick
froth & putting in the fire in lumps in boiling
water for a minute, turning them over
