Sea Pie

Line a good sized bowl with paste
made with fresh beef suet.
Cut into small pieces 1 lb of
beef, lay it on the bottom of the
bowl; slice 1 onion, sprinkle
a handful of flour over; add
a little pepper & salt. Cover all
this over with water then fill
up the bowl with potatoes that
have been peeled & lying in
cold water a little while; cover
the bowl with a lid of the paste,
tie a clean cloth tightly round,
& plunge into boiling water. Boil
for 2 hours quickly.

Damper

To 1 lb of flour ½ a teaspoonful
of soda, & ½ of acid, or 1 teaspoon
of baking powder.
Enough milk or water to
mix this into a stiff dough.
Knead well.

Puffs

Beat very light the yolks of
6 eggs & 1 pint of milk, a
pinch of salt: the whites
of the eggs beaten to a froth
& flour enough to make
the batter like a thick
cream. Bake in cups in a
quick oven.
