The Queen's Trufles

Blanch 1 lb sweet almonds & 1 ounce of bitter almonds & pound to a mortar, occasionally adding a few drops of orange-flaver water to prevent the nuts [?ling]; add 1/2 cup sugar & the beaten yolks of 8 eggs & beat 15 min. sift in 1 cup of fecula (potato flour) & the grated rind of an orange beat vigorously, then stir in 2/3 of a cup of softend butter, not melted. Butter small tins, dredge with with browned shredded almonds, fill 2/3 full of cake batter & let stand an hr in warm place before baking. When baked & cold, ice tops with conf's sugar
