Ginger Bread

2/3 1 C. sugar 2/3 1 C. butter & lard 2 2 eggs 1 1/3 2 C. molasses 3 1/3 5 C. sifted flour 2 3 t. soda 1 1/2 2 t. cinnamon 1 1/2 2 t. ginger 1/2 1 t. cloves 1/2 1 t. salt 1 1/3 2 c. hot water [the amounts in the left hand column were added in pencil]

Cream shortening & sugar. Add beaten egg and molasses, dry ingredients sifted together. Add hot water last. Beat until smooth.

35 min. 325-350 °

Banana Bread

3 1/2 c. sifted flour 1 1/2 t. soda 2 1/2 t. cream of tartar 1 t. salt 2/3 c. shortening 1 1/3 c. sugar 4 eggs well beaten 2 c. mashed bananas (2-3)

Sift flour, soda, c. of t., and salt three times. Cream shortening & sugar. Add eggs & beat well. Add flour mixture alternately with banana. Beat after each addition till smooth.

Moderate oven - 350° - 1 hr.
