Lemon Chiffon Pie


1 tbsp. gelatine ½ tsp. salt
¼ cup cold water ¾ cup lemon juice
4 eggs, separated 1 tsp. lemon rind
1 cup sugar
Prepare a cooked custard of the
egg yolks, half of the sugar, salt
lemon juice & rind. Add the
hydrated gelatine & cool. Make a
meringue of the stiffly beaten egg
whites & the remaining half of
the sugar. Carefully fold the
meringue into the custard mix-
ture & pour into a baked pie
shell. Chill.

Red and Gold Whip Dessert


1 pkg. gelatine 1 cup strawberries
2 cups pineapple juice
2 tbsp. sugar 1 ¾ cups whipped cream
Prepare gelatine using pineapple
juice. Whip, add sugar and
strawberries. Fold in whipped
cream. Place in mold & chill.
