Chocolate Custard Ice Cream - [[Sears]]


1 egg separated 1 tsp. vanilla
1 cup milk few grains salt
¼ cup sugar ½ cup whipping cream
2 sq. chocolate 1 tbsp. sugar
Melt the choc. Combine with the melted
choc., the sugar, the egg yolk & milk.
Cook until the mixture is thickened
or coats a silver spoon. Chill. Make a
meringue by adding 1 tbsp. sugar &
the beaten egg white. Add the
vanilla & salt to the meringue
Fold the whipped cream into the
meringue & combine with the
custard. Freeze.

Bisque Tortoni - Sears


2 eggs ½ cup crumbled macaroons
⅓ cup sugar 1 tsp. vanilla
½ cup milk 1 cup whipping cream
1/16 tsp. salt
Make a soft custard by combining the
eggs, sugar, salt & milk & cooking
until the mixture coats a silver spoon.
Chill. Fold in macaroons & whipped
cream to which vanilla has been added. Freeze.
