1 1/2 c. egg whites Pinch salt Mix and sift 1/4 c. cocoa and 3/4 c. flour 1 t. cream of tartar 1 t. flavoring

Gold Cake

8 egg yolks 1 1/4 c. sugar 3/4 c. shortening 3/4 c. milk 2 1/2 c. flour 4 t. baking powder 1/2 t. lemon extract

Cream short. and sugar Add beaten yolks. Add flavor, milk, then flour and beat hard. 325° - 40 min.

Can be used with filling.

Angel Food Cake

1 c. egg whites (8-10 eggs) 3/4 t. cream of tartar 1 1/4 c. sugar (sifted) 1/4 t. almond extract 1 c. flour 1/4 t. salt 3/4 t. vanilla

Beat whites until foamy - add salt. Add cream of tartar, beat until stiff enough to stand in peaks. Fold in sugar, a tablespoon at a time. Add flavoring. Fold in flour. Pour into ungreased pan - 275° - 50-60 min - increase heat slightly when cake is almost done. Invert cake 1 hr, or until cold.
